99 Sushi Bar opens its vibrant new 99 Lounge at the foot of Burj Khalifa with a new approach to their culinary concept

Since the beginning of the summer, the terrace at swanky 99 Sushi Bar and Restaurant has been undergoing a complete facelift. The 100sqm outdoor seating area will open its doors at the end of October as “99 Lounge”, an epic dining experience at the foot of iconic Burj Khalifa and the Fountains.
True to the contemporary design of the elegant indoor dining room, 99 Lounge’s overall look-and-feel will shine with clean minimalism. From the light gray limestone pavements lined with subtle LED features, to the mauve banquettes of the booths leading to the amber retro-lit bar, the stage is set evenings spent sampling their award-winning Japanese haute cuisine in style.
Whilst the venue will stay true to its culinary fare, the kitchen team led by Chef Ruben Guerrero have created a new menu, fully suited for a more festive nightlife scene. 99 is renowned for celebrating the finest Atlantic bluefin tuna amongst their premium selection of fish, uni, caviar and seafood. Afficionados of the brand are sure to enjoy the Foie ad Maguro Zuke, soy-marinated akami, foie gras, tare and lime zest or the luxurious 99 Chirashi, marinated rice, uni, ikura, toro tartare, caviar and nori cracker.
Due to increasing demand, the menu will also expand its exceptional offer on marbled meats, wagyus and Kobes as well as delicious robata BBQ additions. Carnivores will appreciate the Wagyu Maki, braised shiitake, avocado, asparagus, galangal butter jus and the Beef Tartare Korroke, umami potato croquettes, tamagoyaki, wagyu tartare as well as the 99 Yakitori, A9 Wagyu Skewers and Lava Lamb Rack, served on individual BBQ grills.
All in all, the new dishes will be engineered for sharing and easy nibbling, with new vegetarian options, such as the Shishito Tempura, a crispy and delightfully bitter Japanese pepper served with a yuzu miso mayonnaise and the Vegano Maki, butternut and asparagus tempura, shiitake and truffle leek sauce.
The cocktail menu, too, has been completely revamped in an East-meets-West Hong-Kong state of mind, with well-balanced classics infused with Asian flavours and fragrances. From the 99 Smoky Sour, Nikka from the barrel, Double Black, yuzu, fresh ginger, egg white, honey to the 99 Fizz, Bombay Gin, crème de mûre, lemon, lavender, egg white, top soda or the French 99, Roku Gin, Junman Sake, vanilla, homemade thyme, prosecco, blue curacao and grenadine syrup, guests are sure to get their fix from the bar.
“99 Lounge will be fully revisited to reflect the vibrancy of Dubai, upgrading its standards of comfort, food and entertainment as well,” explains 99 Managing Director Jaime Castaneda. The DJ booth will be the keystone of the new architecture, playing contemporary gipsy jazz house late into the night, surrounded by the beautifully landscaped zen garden, which will leave the spotlight on the showstopper at 99: the shimmering Burj Khalifa.
